Easy PB and Honey Oatmeal Bars

Easy PB and Honey Oatmeal Bars

  • 1 cup Unsweetened Peanut Butter (If using sweetened PB, lessen the honey by 1/4 cup, unless you like it super sweet!)
  • 1/2 Cup Cox’s Liquid Honey
  • 1/2 Teaspoon Vanilla Extract
  • 1/4 Teaspoon Salt
  • 3 Cups Rolled Oats*
  • 1/3 Cup Chopped Almonds (Optional: Nuts, seeds, dried fruit, chocolate chips)

*Lessen the amount of oats if you do more add-in ingredients. (Nuts, seeds, dried fruit etc.)


In a large bowl, combine Salt, Vanilla, Honey and Peanut Butter.


Add Oats and Almonds, mix until completely blended. I had to use my hands for this part! I will say that the more nuts, seeds, dried fruit or whatever, you will need to lessen the Oats or make more honey-peanut butter mixture.


In a baking pan, line with parchment paper or oil with cooking spray.


Put bar mixture in lined or oiled pan, press with hands or I put it between 2 sheets of parchment paper and rolled it out with a rolling pin.


Put in refrigerator for 15 minutes.


Makes 12 Bars (5in x 1in x 1/2 in)



Serve by itself, or with vanilla ice cream or celery sticks whatever you prefer. You can do so much with these bars! Cover with chocolate, add dries fruit, seeds and/or nuts. These bars are easy to take places or store for a midnight snack. Give it to those kids for an after-school snack and  it will make them want to do their homework! Just kidding, I can’t guarantee that but it might help! Enjoy!
